New Year´s Top

As the name indicates, we produce our New Year’s Top at the end of the year, where everybody traditionally celebrates the New Year with champagne and a piece of ‘kransekage’. A traditional New Year top is baked with marzipan, sugar and egg white. Marzipan is made from almonds and came to Europe from the Middle East in the Middle Ages. It is said that it was a baker from Copenhagen who baked the first of these cakes in the 1700s and started this Danish tradition with cakes in various forms and with different decorations.

Our New Year’s tops are baked in different sized rings and decorated with white icing. Before serving, they must be assembled into a festive tower and decorated with flags.
