Mandelkubb is a traditional Swedish cake, it is popular to eat in the Swedish ‘fika’, which means a coffee break – a coffee break does off course include cake.
A mandelkubb is made of flour, sugar, eggs and bitter almonds as the main ingredients. The last-mentioned ingredient is precisely what gives Mandelkubb the name, Mandel means Almond and it is also, what gives them their distinctive taste. They are baked until they have a delicious golden surface and are decorated with pearl sugar on top.
One of the newer cakes here at Coronet, but an old classic to the Swedish afternoon coffee break.
