Cinnamon Cookies
Cinnamon cookies are a traditional Danish Christmas cookie, but this delightful crispy cookie could just as well be eaten throughout the year. The cinnamon cookie, as we know it today, dates back to the 17th century, at that time, Jewish bakers introduced spices that were more exotic and today it is still cinnamon and sugar that defines this cookie.
The cinnamon cookies are baked until they become golden, porous and crispy on the edge. The cookie is sprinkled with extra sugar and cinnamon on top, which adds to the lovely flavour. The balance between the sweet cinnamon, sugar and the lightly salted and buttery baked cake brings together the delicious and lovely taste.
